So easy to prepare and the result is stunning. A favorite under the BUX colleagues as some people asked for the recipe straight after lunch.
Tip: When you get the peas out of the freezer put them in a sieve and rinse with hot water until the peas are thawed. Squeeze them first in your hand above the sieve and get rid of most of the fluid.
INGREDIENTS (serves 4)
4 cups (480g) frozen peas, thawed
¼ cup mint leaves, roughly chopped, plus extra to serve
sea salt and cracked black pepper
1 tablespoon finely grated lemon rind
100g (Persian) feta, crumbed
METHOD
To make the pea smash, place the peas in a large bowl and roughly mash with a potato masher. Add the mint, salt, pepper, lemon and feta. Toss to combine and set aside.
